Healthy, delicious and easy – 5x Lunch

 

Delicious and easy lunch!
Again even this short disclaimer: I can not claim all the credits for these recipes. Not that I want that, I just want to share some meals that make me happy.
Some ideas are mine, some are inspired by other recipes with my own touch to it.

 Here I share some quick and healthy lunches so everybody can enjoy a healthy and delicious lunch. To make it even easier some of them are good for meal prepping, the pancakes, for example, make all your colleagues jealous with your lunch and tell them how to make it too.

 

 

Corn cracker with avocado, goat cheese and rucola

  • Three corn crakers
  • Half of an avocado
  • Some goat cheese
  • One hand of rucola
  •  

    Optional you can add:

  • 1 tomato
  •  

    Slices the tomato, the avocado and the goat cheese. The only thing left to do is to stack everything on top of each other. I would start with the tomato, then the avocado, cheese and as last the rucola but that’s how I like it.
    O and I like a pinch of salt on my avocado.

     

    Alternative:

    You can vary with the cheese. I love it with goat cheese, but buffalo mozzarella is also delicious! And in the pictures, I made it with a bit of feta.

    Spinach and feta omelette on toast

  • 2 hands full of spinach
  • 2 eggs
  • 2 slices of bread
  • A bit of feta
  •  

    Place the bread in the toaster. Heat a frying pan with a little bit of oil. Place the spinach in the frying pan en cook it until it is almost ready. The spinach will shrink a lot and the colour turns into a darker green. If it all looks dark green and it is a lot smaller it is ready.
    Break the eggs and pour them over the spinach. Sprinkle the feta on top. Wait until the eggs are ready and place them over your toast. Sprinkle a bit of salt on top and you are ready for your lunch!

     

    Some veggies, some protein and some fibre in this delicious and quick lunch.

    Dutch pancakes with cottage cheese and spinach

    For the pancake batter

  • 150 grams of self-rising flour
  • 2 eggs
  • Half a litre of milk
  • 20 grams of butter
  • pinch of salt
  •  

    Topping

  • Cottage cheese
  • Fresh spinach
  • How much depends on how many pancakes you will eat with this.

     

    Sift the flour. Sprinkle the salt on the flour and add the eggs. Start whisking and slowly add more and more milk. You need to end up with a quite thin batter to be able to make nice thin pancakes. So if you wish you can add more milk, but also not too much because then the pancakes will fall apart. This is a matter of experience.
    Then melt the butter in a frying pan and mix this through the batter. Don’t clean the pan, this last bit of butter is immediately the grease you want against the sticking of the pancakes.
    Pour a bit of batter in the pan and rotate the pan in different angles to spread the batter equally over the whole pan.
    I like to bake on a high fire. When the top is dry and the pancakes lets go of the pan you can turn it.

     

    When finished spread the cottage cheese over it and add spinach! So you have healthy delicious pancakes. Some veggies some protein and just some pancakes; because everyone needs pancakes sometimes!

    As for the topping, you can think of a lot of different things.

  • Sugar-free raspberry jam is delicious
  • Just normal cheese is one of my favourites
  • Less healthy but oh so good: chocolate spread with strawberries

    Salad wrap

  • One tortilla
  • Some salad
  • 1 tomato
  • Some (black) olives
  • A quarter of a red onion
  • A bit of feta cheese
  • A little bit of olive oil
  •  

    Optional you can add:

  • Cucumber
  • Pinenuts
  • Rucola
  •  

    Cut the tomato in slices, the onion in small pieces and the olives in halves.
    Place the salad on the tortilla, add the tomato, olives and onion. Spread the feta in small pieces over it and pour the oil on it.
    Roll it and eat it!

     

    After some salads I’m hungry with a half an hour, adding a tortilla helps to keep me full.

    Salad with spinach, quinoa and goat cheese

  • A small hand of quinoa
  • Two hands of Spinach
  • Some goat cheese
  • One small sweet potato
  • A few cherry tomatoes
  • Two garlic cloves
  •  

    Dressing:

  • Olive oil
  • Parsley
  • Lemon
  • salt
  • Pepper
  • Amounts depend a bit on your taste.

     

    Optional you can add:

  • Avocado
  • Rucola
  • Roasted almonds
  •  

    Peel the sweet potato and cut in pieces. Cut the garlic or use a garlic press. Spread the potato over a baking tray, sprinkle some olive oil and half of the garlic on top. Place it in a preheated oven on 200 degrees Celsius for around 15/ 20 minutes. Keep an eye on it. If they are getting golden brown stick a fork in it to check if they are done/ cooked.

     

    Meanwhile, cook the quinoa in a pot with water. Make the dressing. Start with a tablespoon of lemon juice, add the garlic, a pinch of salt and/ or pepper and a bit of parsley. Lastly, add the olive oil keep adding until you like the flavour. Keep in mind that the flavour will be less strong if you pour it over the whole salad.

     

    When the quinoa and sweet potato are ready let them cool down for a bit. Cut all the other ingredients and mix together in a bowl. Pour the dressing on top.
    Ready to eat!
