The reason why I visit my parents
Endive, rice oven dish
My dad ‘invented’ this oven dish and I love it! So everytime when I visit my parents I hope we have this for dinner.
Ingredients:
(If you can not get this then a mix of oregano, thyme, marjoram will also do)
The quantity depends on how big your dish is and how thick you make the layers.
Preheat the oven on 200 degrees Celsius and grease the oven dish.
Boil the rice with some vegetable stock. Cut the endive and boil this with some salt* till ready to eat.
Directly after the rice and endive are finished start the oven dish; so don’t let this cool down too much.
Place the rice at the bottom of the oven dish, around two fingers high. Sprinkle the fried onions over it in a thin layer. Cover the dish with the slices of cheese. Then the endive on top, this 1 or 2 fingers high. Next the herbs, a thin layer everywhere. Place the brie over it and last but not least spread the cashew nuts on the dish.
So the order of the dish is the same as the ingredients list. Start with the rice and end with the cashew nuts.
Place the dish in the oven for around half an hour. Best to close the top the first 20 minutes otherwise the cashew nuts can get burned.

* Check with the salt; if you have stock with salt and salted cashew nuts then you don’t add extra salt with the endive. Otherwise, it gets too salty.
